Make Those Holiday Dishes Healthier

It’s Christmas Eve!

I hope everyone is enjoying the holidays. I know a few people who are still doing their shopping. It seems a little late but I hear the sales are great.

Now if you’re someone who’s big on holiday cooking I know you’re making those meals nutritious and delicious. I myself am bigger on the eating part than the cooking. Here are a few ideas to make them as healthy as possible…

Lots of people lack an adequate amount of fruits and vegetables in their diet. Many just find it difficult to eat well during the holidays. How can you when there’s a special pie or tin of cookies lurking around every corner? Just this afternoon I was “forced” to eat a piece of pecan pie made by one of my fellow church parishioners! (Delicious — glad I did my duty and ate it!)

Special Salads

Make a salad that incorporates fruit, like a Waldorf salad. In addition to mayonnaise it contains apples, raisins, berries and other fruits. It’s a great way to get some fruits in. If that doesn’t excite you, try a brussel sprouts slaw. Use thinly sliced brussel sprouts. Toss them in a light dressing with cranberries and parmesan cheese. Mince and dice the vegetables into very small pieces for these salads.

Rice Dishes

How about rice dishes? They’re great for dinner, and many of you already have a rice dish planned. They accommodate the addition of vegetables very well. Few people have an issue with dishes like Spanish rice. In fact many of us LOVE IT! You can throw in 3 different types of vegetables, each adding to the rich flavor and beautiful aesthetic that will attract even the pickiest of eaters.

Soups

Another great way to get your vegetables…soups. This is especially true for those who have trouble eating vegetables. When the soup is boiled, the contents become soft. This is an advantage for anyone who has difficulty chewing. Also, the broth will carry many of the nutrients.

Smoothies

And how about a healthy way to start your day while you’re busy preparing that delicious and healthy holiday meal? Make yourself a smoothie. It’s a lot healthier than making a batch of cinnamon rolls. You’ll also feel less guilt later in the day when you indulge in those tasty holiday  dishes and desserts.
